Samosa
Crowning glory of Indian snack is...... Samosa. Sits like a King on the plate with its fat tummy is..... Samosa. Snack, which is relished by each and everyone on this planet is.... Samosa. I mean the admiration is endless of this deep fried, scrumptiously delicious wonder snack. So, Samosa is the only Indian snack which is pretty famous in all around the world. It is a deep-fried /baked Tea time snack which is filled with boiled and seasoned Potato mixture. Stuffing varies according to region. Paneer, Meat, Cheese are some other stuffing. It is served as an appetizer or evening snack, accompanied with Green Coriander chutney and Sweet Sonth chutney Sometimes with boiled and seasoned Chick-Peas and Yoghurt. Traditionally, it is made of Maida(AP Flour) only but I add Whole Wheat flour and All purpose flour in equal ratio which can serve the purpose of having less guilt while relishing the delicacy whole heartedly.

Ingredients
1.In a bowl add Wheat flour and All purpose flour,Ajwain and Oil and mix the dry
ingredients well.
2.Add water little by little and make a smooth but stiff dough(Like Puri dough). I used ¾cup of
water for kneading the dough. Keep it aside for 30 minutes.
3.In a small bowl take 1 Tbsp. of dry flour and add water in it. Mix well and make a slurry
of runny consistency. Keep it aside.
1.Meanwhile,mash all the boiled Potato and keep them aside.
2.Heat 1 Tbsp.Oil in a pan and add Coriander(crushed and powdered),Hing,Red chili powder,
Chopped Raisin, Salt and Green Peas. Saute them for 30-45 seconds.
3.Add all the mashed Potato in the Pan. Mix all the ingredients well together.
4.Add green coriander in it. Keep it aside and Let the mixture cool for 15 minutes.
5.Divide the dough in Lemon size balls. Roll the ball in oval shape.
6.Cut the shape in half.Take the half in your hand and smear the flour of flour onto the cut side edge.
7.Seal both the corner with the help of your fingers.Stuff the filling in the triangle pocket and seal
it from the oval side.
8.Finish rolling all the balls.
9. In a frying pan add oil and keep the heat in between low-medium.
10.When the oil is lukewarm add Samosa(4-5 at a time).Keep frying until golden brown.
11.Take them out on a dish lined with paper towel to absorb extra oil.
12. Serve hot with Tea, Green Coriander chutney and Sweet Sonth chutney
