Instant Rava Or Sooji Ki Idli(semolina Idli)

Idli is very famous breakfast as well as main course item in South India and traditionally prepared by using some ratio of fermented rice and pulse mixture. Fermentation process is long and tedious. On the other hand Rava idli is very easy to make and does not require any fermentation process. Fruit salt is used to speed up the process and then the end result is pure white like glacires and soft like Ice-cream IDLIES are ready to serve with some chutneys and Sambar.This kind of plate is just sheer bliss on Earth.

Ingredients

Ingredients for Idli:
 5 ½ cups Sooji or Semolina:
 ¾ cup Yoghurt:
 ¾ cup Water:
 5 ½ tbsp Eno or fruit salt:
 Salt to taste

1.In a bowl add Sooji and Yoghurt together and mix well.
2.Now add water and Salt and whisk well again.Batter should be thick yet pouring consistency.
3.In a small temper pan add little bit of oil and add ¼Tsp. of mustard seeds.
4.When start crackling add chopped curry leave in it.
   (I used one whole spring of leaves and chopped them finely).
5.Add this tempering(tadka) in the batter and mix well.
6.Keep it aside for at least 30 minutes minimum.
7.Now add Fruit Salt in it mix well.Let all the froth settle down and whisk well again.
8.Grease the mould with oil. Pour the batter in mould and keep inside the vessel of boiling water.
   Now turn the heat on medium and steam for 15 minutes.Insert a tooth pick or in the Idli to check
   whether it cooks through, if it comes out clean then its ready otherwise cook little bit more longer.
9.Take them out and serve hot with piping hot Sambar,Coconut Chutney,Green Chutney.
