Balushahi is North Indian delicacy and is deep fried in Desi Ghee. It is quite popular in all the North-Indian celebrations. Balushahi is much like "Fried Baati". It is different in texture, and ingredients than Baati. Its flaky and crunchy outside and soft inside.It is fried on slow heat so that the balls can be cooked inside-out properly and should be flaky and crumbly when you eat them.Later on Balushahi is dipped in Sugar syrup whereas Baati is dipped in Desi Ghee. Bati is savory whereas Balushahi is sweet. Lot of dissimilarity at the same time few similarity.

Ingredients

 2 ¾ cups All purpose flour:
 ¼ Clarified butter Ghee:
 Baking Soda: two pinch
 Oil for frying
 1 cup Sugar syrup( 1 cup sugar+ ½ cup water)
For Garnishing
 Pista: chopped lengthwise
 Almond :chopped length wise
 Silver Virk(optional)
Method
1

1. In a bowl add AP flour, Baking Soda,Ghee together and mix very well  until it
    start looking crumbly.
2.Now start adding water ,very little at a time and mix all flour together .(I used less than ¼ cup
    of water).
3. Dough should come together but not be very smooth.
4.Keep it aside for 30 minutes.
5.Now divide it in two parts and start making log.
6.Divide the log in equal size ball.(Size of small Lemon)
7.Make round dough.
8.Add Ghee/refined oil in the pan and turn on the heat on lowest setting.(I used Saffola oil for frying).
9.After 5-8 five minutes its luke warm but not hot.
10.Add Balls in the oil.I added 7 balls at a time. Don't  add too much as all the balls should
     be merged in oil.
11.Keep frying in same heat setting until they are golden brown in color. Heat must be on the
     slow setting all the time
12.It takes almost 15-18 minutes to get the balls golden brown.
13.Take them out on paper towel to get rid off extra oil.

Sugar Syrup:

1.In one cup of sugar add half cup of water and keep boiling it until you get one string consistency.
2.Add Cardamom powder in it and let it cool for 6-7 minutes.
3.Add fried Balushahi in it and let them in the syrup for 7-8 minutes.
4.Fish them out in a plate.
5.Garnish with Pista, Almond and Silver Virk.
