Rajasthani Shalgam (Turnip) Ki Sabji: A Nutritious Winter Delight
As winter embraces Rajasthan, the humble turnip, locally known as Shalgam or Shaljam, takes center stage in kitchens across the region. But when prepared with some added ingredients then it turns out into delicious dish to enjoy in the household.

This Rajasthani-style turnip sabji combines the slight peppery flavor of turnips with aromatic spices and the sweetness of onions and tomatoes, creating a balanced and delicious dish.This sabji can be enjoyed with Roti, Parantha, Laccha Parantha or Naan.

Ingredients
1.Wash the Turnip(Shaljam) throughly and cut them in bite size pieces.
2.Place them in Pressure cooker and boil them for 4 whistle. Let the pressure release naturally.
3.While Turnip are getting ready add Oil and Ghee in another pan.
4.When hot, add finley chopped Onion in it. Fry untill golden brown.
5.Now add grated Ginger and all the dry spices ,saute for couple of seconds and add chopped Tomato in it cook it fro another 5 minutes or untill Tomatoes are cooked .
6.Now add the boiled Turnip (Shaljam) in it, press the big chunks with the help of spatula but do not mash them, some chunks should be in the sabji.
7.Garnish with chopped Green Coriander leaves. Serve hot with Parantha,Roti,Laccha Parantha
