Bhature is very good companion of Chana or ChickPea curry.Traditionally, it is made of all-purpose flour and is deep fried. But, you can use any combination of 2-3 different flour to make it more healthy and to escape the guilt of eating it. In this recipe I used Whole Wheat flour Semolina and All purpose flour.You can use multigrain flour or Bajra and Jowar flour as well. Just mix together any combination and then deep fried and served with its best friend Chole or Chick-Pea curry with some other good companion. I have used one more combination in which I used AP flour and Semolina, both half and half and the end result was bit crunchy texture of Bhatura. You can always play around with combination of flour and can choose which works best for you and your health.

Ingredients

 ¼ cup Sooji or Semolina: (2 oz.)
 1 cup Wheat Flour: (4 oz.)
 ¾ cup Maida or All purpose flour: (6 oz.)
 ¾ cup Yoghurt: (6 oz.)
 ½ tsp Baking Soda:
 ½ tsp Salt:
Method
1

1.In a bowl add All Purpose flour,Semolina, Whole Wheat flour,Baking Soda and salt.
   Mix it well.
2.Now add Yoghurt and knead it well with dry ingredients until all incorporates well.
3.Add water little by little and knead a soft dough like Roti/Chapati.
4.Cover the dough with damp cloth and place it in Oven for 2 hrs.
5.Take it out and knead it again before you roll the Bhatura.
6.Make big Lemon size balls  and start rolling them little bigger than Roti/Chapati.
7.Meanwhile, heat oil in a deep pan and start frying. Once it is golden brown from 
   one side flip it over to the other side and fry Bhatura until golden brown.

8.Serve with Chole,Boondi Raita and salad.
9.Heat should always be high when you are frying them.
