 Jack-Fruit Pickle

Jack-Fruit’s pickle is one the most delicious pickle in North-Indian cuisine. It has very subtle flavor which makes it distinctive from other. For the pickle young /raw jackfruit is chosen and then chopped (in bite size pieces) followed by boiling and drying and mixed with some aromatic spices.Here, I am following one of my mom’s recipes which I used to relish a most during my childhood. In every summer, it was kind of ritual in my home to pickle some of the vegetable and “Jack-Fruit” was one of them. One of our distance Grand-Mom who was  connoisseur in pickling any vegetable successfully. She would come to my home and would guide my mom for the same.After it would get ready to eat I still remember we used to eat it every time whether it was breakfast or lunch or dinner or even with plain rice.Though if it is taken care well can last for almost 3-4 months.The taste of this pickle is so scrumptiously delicious that you end-up finishing it in just  few weeks to just a month.

Ingredients

 3 lbs Kathal (Raw Jack-fruit)
 5 ½ cups Mustard oil
 3 tbsp Fennel seed (Saunf)
 5 ½ tbsp Fenugreek seed(Methi)
 ¼ tbsp Onion seed(Kalaunji) optional
 1 tbsp Yellow mustard seed
 3 tbsp Black Mustard seed
 ½ tbsp King Cumin(Ajwain)
 ½ tbsp Cumin(Jeera)
 5 ½ tbsp Saltor as per taste.
 ½ tbsp Red chili powderor as per taste.
 ½ tbsp Turmeric powder
 ½ tsp Asafetida
 ½ tsp Black Salt
 ¼ tsp Black Pepper
Method:
1

1.Peel the jack-fruit and cut it into bite size pieces.
2.In a pan heat water and bring it up to a boil. Add Salt in it and add the pieces of
  Jack-fruit. When we add jack-Fruit the temperature of the water goes down so let it
  come upto a boil again and boil it for 5-6 minutes or just check it with your hands.
  It should be parboiled not completely boiled.
3.Drain all the water in the sieve/colander and spread the Jack-fruit on to a cotton cloth.
4.Let it get dry in bright Sun-light for almost 3-4 hrs.
5.Now take all the whole spices (Fennel, Fenugreek, Mustard, cumin,King-cumin) and  grind them coarsely. Don’t grind onion seed.
6.Heat oil in a pan on medium flame. When it’s hot enough add all the ground spices and turmeric and asafetida in it. Turn off the heat.
7.Add Jackfruit in it and mix well.
8 Add all the remaining powdered spices in it and mix well.
9.Now pickle is ready. Let it get completely cool and then transfer it in sterilized glass jar.
10.After 2-3 days add more oil in it so that all the pickle merge in the oil. Keep stirring it occasionally. After 6-8 days, it gets sour in taste and ready to eat.
11.Enjoy this pickle with Roti/Paratha/Naan bread/Rice or Biryani.
 Note: When you cut the Jack-fruit smear oil in your hands and on knife Because it has white milk kind of substance in it and that is sticky. Always use dry spoon when you get  the Pickle from the Jar.
