Bathua/Bathuwa Ki Kadhi/ बथुआ कढ़ी
BATHUA/BATUWA KI KADHI
Kadhi-Rice is famous soul food of North-Indian delicacy. Bathua Kadhi is prepared in winter and more specifically it is winter delicacy only. Adding Bathua takes it to the different flavor profile and enhance the health quotient of the dish. Bathua Kadhi is made of Gram flour,Bathua and yoghurt mixture which is cooked in lots of spices. Kadhi is best served with Rice only but you can have it with Roti, accompanies with some cooked vegetables as well.

Ingredients
1.Clean the Bathua by separating it form the thick stalk and wash it in running water.
2.Chop it roughly.
3.Now in a big bowl add yoghurt and Gram flour together and whisk it well so that all
the lumps dissolve. Add water.
4.Add Turmeric,Salt,Red Pepper powder,Asafoetida and Coriander powder.Whisk well again.
5.Take a big pan and place it on the stove, turn on the heat. Add Mustard oil in it.
When hot enough add Mustard,Cumin and fenugreek seeds in it.When start crackling
add chopped Ginger and Green Chili in it.Saute it for few seconds.
6.Add Yoghurt-Gram flour mixture in it. Bring it upto a boil and let it cook it for 10 minutes.
Reduce the heat on medium.(I used whole milk Yoghurt which is less sour. Greek Yoghurt and 2%
Yoghurt are more sour so less quantity can be used.)
7.Now add chopped Bathua in it.Mix well and cover the pan with the lid.
8.Cook it for 10-15 minutes on slow to medium heat.Serve it hot with Rice or Roti.
