  POTATO(ALOO) CURRY
Aloo curry is the key dish of Ashtami Thali as is served with Poori in the prasad. This curry is pretty simple yet very delicious.Gravy of the curry is just tomato based and tempered in whole Garam-Masala with all the essential spices.Curry goes very well with Puri and can be eaten with Roti as well.

Ingredients

 4 PotatoMedium size(Boiled)
 1 TomatoBig size to 2 small size
 2 Green Chili
 ½ tsp GingerChopped
 ¼ tsp Turmeric
 1 tsp Coriander powder
  tsp Asafoetida
 ½ tsp Red pepper powder
 Salt to taste
 Coriander Leaf for Garnishing.
For Tempering :
 1 Bay Leaf
 24 Cloves
 2 Green Cardamoncrushed
 810 Pepper Corn
 ½ tsp Cumin Seeds
Method:

1. Boil the Potatoes and cut them in bite size pieces.
2. In a Grinder add Tomato,Green Chili, and Ginger and grind it in fine paste.
3. Add 1 Tbsp. of Avocado oil in a pan and heat it.When hot enough add all the ingredients
    of tempering in it .(You can use any of the cooking oil).
4.When start crackling add Tomato puree in it and mix well.Add all dry spices in it.
    Let it cook for 7-8 minutes.
5. Add boiled Potato in it and let it simmer for 5-8 minutes.
6. Garnish it with green coriander. Serve hot with Puri or Roti.
