Choley(chick-pea) Curry

Choley is a north indian curry dish and best complement with Bhature but it goes very well with Puri,Roti,Naan and Rice.White kabuli-Chana or Chick-Pea is used for the curry.Kabuli-Chana is soaked overnight and then simmered in generous amount of onion-tomato gravy.Chana Masala add distinctive flavor to the dish.This popular curry is pride of every festivities or function.No occasion is complete without Choley with Bhature or Choley with Puri or Choley with Naan.

1.Wash Chick Pea in running water and soak them overnight.Strain the water and add 
   fresh water.Add salt and pressure cook them.Keep them aside.

Ingredients

 5 ½ Chole: cup(soaked overnight
For Gravy:
 1 cup Tomato:(chopped)
 ½ cup Red onion chopped :
 2 Green chillis:
 ½ Ginger piece: inch
 2 Garlic clove:
 1 tsp Turmeric:
 5 ½ tsp Coriander powder:
 ¼ tsp Asafetida:
 5 ½ tsp Chana Masala:
 ½ tbsp Roasted cumin powder:
 ½ tsp Amchoor Powder:
 Salt to taste
 Red pepper to taste.
For Tempering:
 2 Bay leaf: medium size.
 4 Cloves:
 1,012.00 Black pepper corn:
 4 Green Cardamom: whole.(Crush them in mortar for 2-3 times so that it opens up
 but seeds still stay inside.
 ½ tsp Cumin seeds:
Method
1

1.In a mixer add tomato,onion,garlic,green chilli and ginger piece and grind them in 
   fine paste.
2.Heat 1½ table spoon of oil in pan.Add cumin seeds, bay leaf, clove,green cardamom,
   pepper corn in it.when start crackling add tomato-onion puree.Reduce the flame 
   on slow and cook it for 5 minutes. Add all the spices in it and let it cook for another 
   5 minutes.
3.Now add boiled Chick peas in it and mash some of the chick peas with the help 
   of the back of ladle for little bit thicker consistency.
4. Let them boil for couple of minutes on high heat and sprinkle Chana Masala and 
    roasted cumin powder.Now reduce the flame on low and let it simmer for 5-6 
    minutes on low flame.Garnish with chopped cilantro.Serve hot with 
    Naan,Roti,Rice,Bhature accompanied with Boondi Raita and Salad.
