Dal Ki Khasta Kachauri
Dal ki khasta Kachori is renowned street snack or breakfast in Rajasthan. These Kachories are inspired by one of the famous shop in my home town Bharatpur.(Those who don't know about Bharatpur,this city is well known for" Keoladeo National Park"and its invincible fort also known as "Loha Garh"). Any ways come to the recipe:so there is a shop in the city which is known as "Devi Ram Ki Katchori" and its been serving this scrumptuous delicacy with Aaloo ki Sabji and some more accompaniment since more than half decade. Here, I tried to create same taste and intact the
authenticity of the dish and still trying to figure out the red spicy chutney they serve with the whole dish.Tried making same filling which I see at their shop when I visit there. They never tell their family recipe secrets. In the filling I used mixture of Dal and then roasted it with all the essential spices.Then this filling is stuffed in flour dough and slow cooked in Refined Oil.

Ingredients
1.Soak Dal(Urad+Moong) for 2 hrs.;drain the water and grind them coarsely.
2.In a pan add ½ Tbsp. of cooking oil. When hot add coriander seeds in it.
3.When start crackling add chopped ginger and green chili in it .Saute for few seconds.
4.Now add ground Dal in it .Mix well and add all the dry spices in it.
5.Let it cook for 8-10 minutes and add boiled potato in it .
6.Keep it aside and let it cool down. Make small key lime balls of the stuffing.
1. In a bowl add all the ingredients and mix well.
2. Knead in a smooth soft dough and keep it aside for 20 minutes.
3. Make small balls and fill the Dal stuffing in each ball.
4. Roll softly on Rollin-Board or press gently in between your palm in flat round shape.
5. Keep them cover until all the balls are done.
6. Heat oil in a pan when hot enough add Kachori ;fry them until they are golden brown.
Heat should be between slow-medium and its take good 12-15 minutes to get the golden color.
7.Serve hot with Potato curry and Green Chutney.
