Dhokla is one of the healthy snack which has its root in Gujarat but popularly eaten in every corner of North-India.It is much appreciated dish of Gujrat than any other food.Dhokala is fermented and steam cooked dish hence is considered as one of the healthy dish. Main ingredients is Gram flour but I cook it with Moong-Dal( MOONG DAL DHOKLA/CAKE)  as well which is much healthier version and easy to digest.This recipe is consisting Gram flour only.For the fermentation I add Eno instead of Baking soda.

Ingredients

 1 cup Gram flour :
 2 ¾ cups Water:
 ¼ tsp Citric Acid:
 ½ tsp Red pepper powder: .(Optional)
 ¼ tsp Turmeric:
 ¼ tsp Asafoetida:
 ½ tbsp Eno fruit salt:
 2 tbsp Sugar:
 1 tbsp Oil:
 ½ tbsp Ginger: (Optional)
 ½ tbsp Green chillies: (finely chopped, Optional)
 Salt to taste.
Method:
1

1.In a bowl add all dry ingredients Gram flour, Salt, Pepper, Asafoetida, Turmeric powder,
Citric acid,Sugar and mix them well.
2.Add water and keep stirring it continuously until all the lumps dissolve.
Batter should be of running consistency. Add oil, ginger and green chili and mix it well.
3. Heat water in a big flat bottom pan or Dhokla pan. Spray cooking oil in tray.
4. Now add Eno fruit salt in the batter and mix it well. It will double in volume.
5. Right after adding fruit salt pour the batter in tray. Fill the tray half way through,
so that it can rise when it is cooking.( I used 8"W*1.5"D tray).
6. Place the tray in the pan and reduce the heat between high- medium.
7. After 15 minutes check it with the help of knife. Insert knife in the tray if it comes out
clean, it is done otherwise cook for 3-4 more minutes.
8.When it is done take out the tray from the pan.Let it cool for a while.
With the help of knife scrape the edges and cut it in square shape bite size pieces.
9.In a small pan add 1 Tbsp. of cooking oil, when hot add Mustard seeds.When seeds
start crackling add sliced Green chili. Add half cup of water and bring it upto a boil.
Turn off the heat and let it cool for 5 minutes.With the help of spoon pour this tadka
on the Dhokla.
10.Garnish with chopped green coriander and Coconut.Serve with
Green Mint-Coriander chutney.
