Indian cuisine has so many varieties of desserts according to the seasons or the festivities around.This recipe is very special during the time of winters as it serves two purposes. One is as name suggests :it is sweet and the second one is, Til/Sesme seeds provide warmth to the body during bitter cold of Northern part. This time of the year specially on the occasion of Makar-Sankranti, it is prepared and welcomed by each and every household.Main ingredients of this dish are Sesame seeds and Mawa.
Sesame seeds are dry roasted with full of love and affection and more importantly with lots of patience. Then Mawa and sugar are added to the seeds with some flavorsome spices. All ingredients are incorporated so well and the end product is scrumptiously delicious Barfi.

 ½ tsp Til/ Sesame seeds:
 1 cup Khoya/Mawa :
 ½ cup Sugar: or as per your taste
  tsp Green Cardamom powder:
  tsp Nutmeg powder:
 For garnishing:
 1 tsp Almond:Finely chopped
 1 tbsp Pistachio:Finely chopped
 Method for Mawa/KhoyaTake 8 oz. of Ricotta cheese. Add it to the pan and keep tossing it on slow to medium heat for approximately 8-10 minutes or until it gets golden brown.Heat must be in between slow-medium only.Take it out in a plate.
Method for Barfi:

1.In the same pan dry roast the Sesame seed on slow flame for 20-25 minutes until 
   it turns golden brown or until it starts crackling.Heat must be on slow to medium 
   otherwise it burns easily.
2.Grind them coarsely in food processor.(2-3 pulse are good enough) .
3. In the same pan add Mawa and Ground sesame seeds together and mix it well.
    Add Sugar in it while the heat(slow heat) is still on so that sugar can melt.
4. Add Nutmeg and Cardamom powder in the mixture and mix all the ingredients very well.
5.Smear Ghee on a clean dish and spread the mixture evenly onto it.
6.Garnish with Almond and Pistachio.Sprinkle Rose leaves powder on it(Optional)
7.Let it get cold for like 10 minutes and cut them in square or diagonal.
8. Enjoy it as dessert or as snack at Tea time.
