Pinni is North-Indian dish usually eaten in winters.Winters are so cold in northern part of India and this dish works as saviour by keeping the body warm.Traditionally, it is made of Urad Dal but you can make it with whole wheat flour also.Whole wheat flour is roasted with ample amount of pure Ghee and then edible gum and dry fruits are added in it.It has a crunch in it due to the edible gum.Cardamom powder gives this dish a nice aroma.As this recipe doesn't have any moisture.It can be stored for almost couple of months.This dish is so sinfully good that you can't resist yourself having just one.You can have it as dessert or in breakfast with milk.

1.Add little bit of Ghee in a pan on medium heat.
2.Add Gond (edible gum) in it and fry it until it gets golden brown.When it fries it puffs
up almost double in size.Press it with your fingers to see whether it is fried well.
It should be crumbled after frying.
3.Fish it out in a plate and with the help of potato masher crush it into crumbly form.
Keep it aside for a while.
4.In the same pan add whole wheat flour and remaining Ghee and roast it until it
turns golden brown.Heat should be on slow to medium.Keep stirring it constantly.
In 20-25 minutes it turns golden brown or you feel the aroma of roasted flour.
4.Now take it out in separate bowl and let it get cold little bit so that you can handle the heat
with your hands while binding the Pinnis. Now add Pistachio, Almond,melon seeds
and cardamom powder.Mix it well and add sugar in it.
Garnish it with chopped almond ,pistachio and silver Virk.
