Peanut-jeggery-sesame Chiikki

Sesame,Peanut and Gud ki Gajak or Chikki is eaten at the time of winter or more specifically at the time of Makar-Sankranti/Lohiri in North India.This dessert is very simple and rustic and you can eat it as snack at any time of the day.This is very healthy snack as sesame seeds keep the body warm at the time of winter and Jaggery is very good for digestion.Dry fruits can be added to enhance the crunchy texture of the dish.I have added Kevda water to enhance the flavor and profile of the dish.

 1 ½ cups Sesame Seed
 2 cups Jaggerey
 1 cup Peanut skinned and raw
 ¼ cup Ghee or clarified butter
 2 tbsp Kevda Water Kevda water is for flavouring and optional
 1 tbsp Sliced Almond
 1 tbsp Grated Coconut
 1 tbsp Fennel seeds
Method:

1.In a pan dry roast Sesame seeds until they are golden brown.It takes  almost  20-25 minutes.Heat should be on low-medium.
2.Take them out in a bowl and add skinned raw Peanut in it. Dry roast them as well on
   low-medium heat for 10-12 minutes or until raw flavor goes away.Take them out in a bowl.
3.Now add Ghee or clarified butter and warm it through, then add Jaggery in it.
4.Keep stirring it until it all melts in liquid and let the liquid bubble up for almost 4-5 
    minutes.Heat should be on medium to high.
5.Add Peanut and Sesame seeds in it. Keep stirring continuously .
6.Add Kevda water in it and mix well.
7.Line a baking tray with silver foil and smear Ghee on the surface.
8.Pour Peanut-Sesame mixture onto the sheet and spread evenly.Pat the tray 2-3 
    times for more even surface.
9.Sprinkle Fennel seeds, sliced Almond and grated Coconut.
10.Let it cool down for just couple of minutes and start cutting it in bite size pieces.
     If you cut it even after 5 minutes its kind of hard and really difficult to cut so don't 
     wait too much.Use a very sharp knife to cut it.
     Enjoy them as dessert or snack. Chikki can be stored for almost more than a month
