Panjiri is offered as "prasad" in Satya-Narayan Pooja in North-India."Panjiri" and "Satya-Narayan Katha" complement each other so well that it is understoods fact that when you say Satya-Narayan Katha ;means Panjiri has to be the offering to The God. So Panjiri has that ritualistic value in North-Indian household. It is served as Prasad to devotees along with PanchAmrit and तुलसी- दल(Basil leaves). Traditionally, it is just Wheat flour, Sugar,Green-Cardamon for aroma and some dry fruits. That's it. However; possibilities are endless and you can go beyond these 4-5 ingredients.
After all,"Bhagwan bhaav ke bhookhe hain"( God cares for the emotion added to the offering) not the ingredients. So in this recipe apart of Wheat flour, I used Semolina, Edible Gum, Charoli, Char-Magaj, Fox-Nut and some other dry fruit for more rich flavor.

 1 cup Whole Wheat flour:
 ¼ cup Semolina or Sooji:
 ¾ cup Sugar: or to taste
 2 tbsp Edible Gum: .(Fried and crushed)
 ¼ cup Desi Ghee:
 1 tbsp Charoli or Chronji:
 5 ½ tbsp Char-Magaj or Melon Seeds:
 1 tbsp Raisin or Kishmish:(chopped)
 ¼ tsp Green-Cardamon: .(crushed)
 ¼ cup Almond : (chopped length wise) for garnishing.
 ¼ cup Pistachio: (chopped length wise) for garnishing.
 ½ cup Fox-Nut or Makhane: (roasted) for garnishing.
Method:

1. In a deep Pan add Whole-Wheat flour and Semolina together and dry roast them on low heat
for almost 20 minutes and keep stirring it.
2. After 20 minutes it starts getting golden brown. Stir it another five minutes. At this point add
Ghee in it and mix very well until it all dissolves.
3. In another pan add 2 Tbsp. of Desi-Ghee. When hot enough , add Edible gum in it and shallow
fry it until it all puffs up and double in volume.
4. Take it out in a plate. Fry Fox-Nut/Makhane in the same pan take them out in roasted flour bowl.
5. In same pan add melon seeds and Charoli . Fry them for 45 seconds. Heat should be on medium.
6. Take them out in the same bowl in which you have roasted flour.
7. Now add Sugar in the flour and mix all the ingredients together.
8. For fried Gum either you can use grinder on pulse setting or just crush it by rolling pin.
9. Add it to the flour mixture, add Green Cardamon and Kishmish and mix well.
Garnish it with Pistachio,Almond,Rose Petals and fried Foxnut.
