Gatta Curry is famous traditional Rajasthani dish which is prepared with Gram flour or widely known as 'Besan'.Govind Gatta is somehow different in shape.Govind gattas are "GOL-MATOL" ROUND in shape and are much more richer than the regular Gatta Curry .
It has "Khoya-Dryfruits-Paneer" filling inside and then merged in Yoghurt-Khoya-Tomato-Onion base garvy. Stuffed Govind Gatta curry is more rich and succulent hence the name is stuffed GOVIND GATTA or Shahi Gatta.It is served with Roti,Nan,Rice and some other accompaniments.Govind Gatta requires same ingredients as regular Gatta, only filling requires couple of extra ingredients than regular Gatta Curry. You need khoya or Mawa, grated Paneer and few Dry Fruits and season it with Salt,Asafoetida and dash or red pepper powder.That's it.You can use as much dry fruits as you want but then it makes the curry more rich.

Yield: 22 counts or depending on the size.
1.In a bowl add 1 cup of gram flour with salt, pepper, asafetida, and crushed coriander seed.
Mix it well. Add oil in it and mix.
2.Add water in the mixture and make a dough. Grease your hands as gram flour tends to
stick. Dough should be medium soft. Divide the dough in 2 equal parts.
3.Make cylindrical shape out of each dough and then cut them in small size.
Make balls of key lime size and flattened it in round shape. Now fill the stuffing in it and seal it from all the side.
4.In a Pan heat water. when it starts rolling boil drop all the balls into it. Cook them for 10 minutes.
5.Fish them out and let Gattas rest for 5-6 minutes.Don’t throw the water as this water
is used in gravy.
6.In another pan heat oil. When it is hot enough drop Gatta balls in the hot oil and fry them
for 2-3 Minutes or untill they get light golden color. Fish them out and put them on
paper towel to absorb extra oil.
